I was double thankful! Once on Thanksgiving Day with five of my six siblings, Debbie, Cindy, Jeffrey, and Amy and their families at Amy’s house (we missed Lisa, but if she had been there with all her families, the house might have split in two!) , and then thankful again on Black Friday. 

I’ve never been a BF shopper. Instead, I had Thanksgiving Dinner with two of my sons and their sweet families.

 We had traditional TGing dinners both times, which means I probably gained twice as much as usual. LOL. 

Everyone pitches in for both dinners. 

My right knee has gone south on me, so I’ll be having knee replacement sometime in the not too distant future. (Your prayers are much appreciated!) 

So for my contribution, I made Fresh Apple Cake. 

The first time I had this cake, Mama sent it to me in college. It looked like chocolate with the caramel icing, so I didn’t cut it. (I’m not a chocolate fan.)

Finally, one of my friends told me to cut it and she’d eat it for me. I did, and when I got a whiff of the actual cake, I practically ate the entire thing. 

I could have gained my entire freshman fifteen right then and there. 

It’s not my recipe. It’s from Tuela Privett. 

APPLE CAKE

4 C fine chopped and peeled apples.
2 C sugar
3 C flour
2 t soda
1 t salt
2 t vanilla or 1/2 t nutmeg & 1 t cinnamon (I’m a nutmeg and cinnamon fan!)
2 eggs
1 C cooking oil
1 C chopped nuts
Combine sugar and chopped apples. Let stand until juice forms.
Sift flour, soda, salt, and spices (if you flavor with spice).
Mix with the apples and sugar, add nuts, eggs and oil. Stir all together.
Bake 45 minutes at 350 degrees or until a toothpick comes out clean.

CARAMEL ICING

3 C sugar
1 C sweet milk
3 T butter
1/4 t salt.
Melt 1/2 C sugar in skillet, mix the remaining 2 1/2 C sugar with milk and butter. Place on fire when hot add melted sugar and stir constantly until drop stirred on saucer is creamy. Beat and when thick, spread on cake.
My favorite dessert! I’m very thankful for Tuela and Mama and Apple Cake!

    And thank you for your prayers. This is my 2nd knee replacement. I got my hip replace back about 11 years ago.
